KEEPING TRADITION ALIVE
After literally growing up in the restaurant industry, Jake Dell officially joined Katz’s Delicatessen in late 2009 and is currently in charge of all major operations. “When people ask what I do for a living, the best answer I can give is that I maintain the cherished food traditions of my ancestors,” says Dell. “In my seven years running the restaurant, I can tell you that I’ve seen my fair share of change in the neighborhood. But the one constant is Katz’s Deli itself. … After all, the history of Katz’s is intertwined with the history of Jewish food, of the Lower East Side, and of New York City as a whole.”

Like his father and grandfather before him, Dell believes it’s important to grow Katz’s Deli at a pace that doesn’t impact the quality of its food. “This is especially important now as we look ahead to the opening of our first ever outpost in Brooklyn, and to a rapidly growing e-commerce market,” he says. Dell turns down opportunities for expansion frequently, but hopes the new Brooklyn location will help the deli shed an undeserved reputation as a tourist spot. “It will allow Katz’s Deli to create a delivery presence for small orders, which will have an impact both on commercial lunches and residential dinners, and by keeping this additional space limited in both size and capacity, we can ensure that quality will be maintained,” he says.
